Karen Shaw’s Berry Damper

This Damper will have you coming back for more

 

In a bowl put
  • 500g plain flour
  • 1/2 tsp baking powder
  • 1 cup caster sugar
  • Juice of 1 orange
  • Teasp vanilla
  • 2 cups of berries
Directions

Stir with a whisk Add enough water or apple juice to mix to a moist but not wet mixture.

Bring together in a ball with enough flour to stop sticking to your hands.

Cover trivet in a camp oven with alfoil and brush with oil. Put damper onto trivet and sprinkle with sugar.

Put into the fire with a good shovel full of coals on top. Cook for about 30 to 40min.

You need medium heat top and bottom But check it after 20 min Tap the top and if it sounds hollow it is ready.

Serve with butter and cockies joy. Xxx that’s it.
